Cheesy Chicken Tikka & Mushroom Fries

This recipe takes crispy fries and smothers them in a creamy, cheesy mushroom sauce, topped with flavourful chicken tikka. It’s the ultimate comfort food to share (or keep all to yourself).

  • For the Fries:
  • 500 g frozen fries
  • Oil for deep frying
  • Pinch of salt
  • For the Chicken Tikka:
  • 500 g boneless chicken cubed
  • 2 tbsp oil
  • 2 tbsp yogurt
  • 1½/ tbsp tikka masala
  • Salt to taste
  • For the Mushroom-Cream Sauce:
  • ¼ cup mushrooms sliced
  • ½ cup cream
  • 2 tosp mayonnaise
  • ¼ cup cheddar cheese shredded
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • Pinch of salt
  • Optional Toppings:
  • Mozzarella cheese
  • Oregano
  • Jalapeños

Method
 

  1. Step 1: Cook the Fries
  2. Heat the deep frying oil in a large pot or deep fryer.
  3. Fry the frozen fries until they are golden brown and crispy.
  4. 3.Drain excess oil on paper towels, toss with a pinch of salt, and set aside.
  5. Step 2: Cook the Chicken Tikka
  6. In a bowl, mix the cubed chicken with yogurt, tikka masala, and salt.
  7. Heat 2 tablespoons of oil in a pan over medium-high heat.
  8. Add the marinated chicken and sauté until fully cooked through and slightly charred on the edges (about 8-10 minutes). Remove from the pan and set aside.
  9. Step 3: Make the Mushroom-Cream Sauce
  10. In the same pan (wipe it lightly if needed), add the sliced mushrooms and sauté until soft.
  11. Turn the heat down to low and pour in the cream and mayonnaise. Stir well to combine.
  12. 3.Add the cheddar cheese, black pepper, garlic powder, and a pinch of salt.Stir continuously until the cheese melts and the sauce becomes smooth and slightly thickened.
  13. Step 4: Assemble and Serve
  14. Place the crispy fries on a large serving platter or in a baking dish.
  15. Layer the cooked chicken tikka over the top of the fries.
  16. Pour the warm mushroom-cream sauce generously over the chicken and fries.
  17. Optional: Top with shredded mozzarella cheese, a sprinkle of oregano, and sliced jalapeños. If using mozzarella, pop it under an oven broiler for 1-2 minutes until melted and bubbly.
  18. Tip: Serve immediately while the fries are crunchy and the sauce is hot!
