  • 2 tbsp oil
  • 5 –6 tomatoes cut into halves
  • 1 small onion chopped
  • 2 –3 garlic cloves chopped
  • 1 tbsp tomato puree
  • Salt to taste
  • ½ tsp chili flakes optional
  • 1 tsp paprika
  • 1 tsp pasta seasoning
  • ½ tsp black pepper
  • 1 cup cream
  • 1 cup Parmesan cheese
  • Water if needed for consistency

     Pasta Water Hack: Don't throw away all the pasta water! If your sauce feels a bit too thick, add a tablespoon or two of the starchy water you boiled the pasta in; it helps the sauce emulsify and cling perfectly to the noodles.
     Tomato Tip: For an even smoother sauce, you can remove the tomato skins after they become soft in the pan before mashing them.
     Cheese Quality: Always use freshly grated Parmesan cheese rather than the pre-grated kind to get that perfect, silky melt in your sauce.

  2. 1 Heat oil in a pan on medium heat.
  3. 2 Add tomatoes, chopped onion, and garlic.
  4. 3 Cover and cook until everything becomes soft and mushy.
  5. 4 Mash the mixture using a spatula or masher until smooth.
  6. 5 Add tomato puree and all the spices (salt, chili flakes, paprika, pasta seasoning, black pepper). Mix well.
  7. 6 Pour in the cream and add Parmesan cheese. Stir until the sauce becomes creamy and rich.
  8. 7 Add a little water if the sauce is too thick.
  9. 8 Add the boiled pasta and mix until well coated.
  10. 9 Cook for 1–2 minutes more and serve hot.
